(Toasted Pecans)

French settlers dispossessed in the French-Indian War settled in Louisiana where they brought this wonderful praline recipe.  But things got out of control in the Big Easy and chefs started using almonds instead of pecans! (Gasp!)

Ah, but wait, a recipe survived the exodus in the form of a complex oral poem which only Frank Michaud and five other Quebecois know. Which makes this muffin, if not the tastiest, one of the rarest in the world.
